- 1 3/4 cups of flour
- 2/3 cups of sugar
- 2 teaspoons of baking powder
- 1/2 teaspoons of baking soda
- 1/4 teaspoons of salt
- 1 cup of mashed ripe banana (2 to 3 medium bananas)
- 1/3 cup of shortning, margarine, or butter
- 2 tablespoons of milk
- 2 eggs
- 1/4 cup chopped nuts (optional)
Pour batter into a greased 8x4x2-inch loaf pan. Bake at 350 degrees in oven for 55 to 60 minutes or until center doesn't stick onto a toothpick.
Makes 1 loaf (16 servings)
