Banana Bread

  • 1 3/4 cups of flour
  • 2/3 cups of sugar
  • 2 teaspoons of baking powder
  • 1/2 teaspoons of baking soda
  • 1/4 teaspoons of salt
  • 1 cup of mashed ripe banana (2 to 3 medium bananas)
  • 1/3 cup of shortning, margarine, or butter
  • 2 tablespoons of milk
  • 2 eggs
  • 1/4 cup chopped nuts (optional)

In a large mixing bowl, combine 1 cup of the flour, and all white dry ingredients.  Add mashed banana; shortning, margarine, or butter; and milk.  Beat with electric mixer until blended.  Add eggs and remaining flour; stir in nuts.
Pour batter into a greased 8x4x2-inch loaf pan.  Bake at 350 degrees in oven for 55 to 60 minutes or until center doesn't stick onto a toothpick.
Makes 1 loaf (16 servings)
